Decadent Truffles

A favourite at Christmas time, I know this comes from Tuesday October 31st, 1994, as there is a Reuters release on the back of the recipie about Senna and Prost. 

You can finish the truffles with cocoa powder, diced candied ginger, coconut, grated chocolate or simply melted chocolate with a little nut oil in it.


TRUFFLES


Rating: moderate


Ingredients:

1/4 pint cream
2 tblsp rum
1 oz unslated butter
5oz dark chocolate
1 tbspn greek yoghurt.
cocoa powder for finishing.


Method:

Bring cream, rum and butter just to the simmer stage.
Grate chocolate in the food processor, and add the cream.  process until chocolate is melted. 
Add yoghurt and process slightly to mix.
Refridgerate until the next day.
The next day, roll teaspoons of the mixture in the cocoa powder.
