Ooh La La Tea Cake

On a Sunday afternoon this was our special treat, I loved the cinnamon and sugar and butter on the top.  its actually a very versatile cake, you can put thinly sliced apple on the top before baking, or any fruit you like.  Its perfect for an afternoon tea, particularly as you don't need to let it cool before serving.

The recipie calls for the ingredients to be added to the stiff egg whites, but I think I will try beating the egg yolks and essence together, then the egg white and sugar and folding it in.  This may result in a lighter cake.
 


French Tea Cake

Rating : moderate


Ingredients:

1 cup self raising flour
1 egg
1/2 cup sugar
1/2 cup milk
1 tablespoon of butter, melted
vanilla essence

Method:

Separate the whites from the yolks of the egg.
Beat the egg white until stiff, add the egg yolk and gradually beat in the sugar. 
Mix in the vanilla essence.
Fold in flour and milk alternatively, then beat in the melted butter.
Pour into a 7inch greased sandwich tin.  
Bake at 180C for 25 mins.
While hot, brush with extra melted butter and sprinkle with cinnamon (and castor sugar if desired)
