I cook it for 15 mins for each 500g - this gives you a medium to well done roast. You MUST REST the meat. Then cut it across the grain and serve with a green salad that has been shoots, cashews and sliced mango added. Dress the salad with a dressing of orange juice and olive oil
BBQ BUTTERFLIED LEG OF LAMB
Rating: Moderate
Ingredients:
1 butterflied leg of lamb, trimmed of fat.Olive oil
Marinade:
1/3 cup hoisin sauce
4 large cloves of garlic, finely chopped
3 tbsp finely chopped fresh ginger
1/4 cup soy sauce
1 tbsp honey, warmed
2 teasp freshly ground pepper
4 green onions, finely chopped
1 tblsp sesame oil
1 teasp chilli sauce
1 tbsp peanut oil
2 tbslp lime juice.
Method.:
Combine all marinade ingredents in a bowl.
Put lamb into large snap lock bag and carefully pour in the marinade. Remove air and seal.
Chill overnight, turning occassionally.
Return lamb to room temperature and brush with olive oil.
Sear both sides of the lamb on a preheated, hot BBQ.
Reduce to medium, and cook for 15 minutes each side, (for rare) longer if desired.
REST for 15 minutes before carving.
