Basic Muffins

Vary this recipie by adding whatever fruit or nuts you like (about 1 cup)  You can also take out a little plain flour and substitute oats or sunflower seeds etc.  You can also sprinkle chopped nuts or granulated sugar on top (not so healthy).

These are very useful when you have an abundance of fruit, as they can easily be frozen for later.



Basic Muffins

Rating : Moderate

Ingredients:

 1-1/2 cups self raising flour
1/2 cup plain flour
1/4 cup sugar
1/2 tsp salt
1 cup milk
1 egg
1/3 cup sunflower oil

 Method:

Mix dry ingredients and any fruit and nuts.
Mix wet ingredients together, and beat to combine egg.
Combine both mixes together - DO NOT beat until smooth.  Just mix lightly, it does not matter if there are lumps.
Fill paper muffin cups to 3/4 way.  Top with any toppings you like, (eg fruit, nuts, sugar, cinnamon).
Bake in 200C oven for 20-25 mins, or until cooked through.
