Green Tomato Relish

Recently one of my tomatoes was damaged in the wind, and I had a whole lot of green tomatoes.  This is also something that happens at the end of the season when the plants need to come out.  How to use them up?  Make a pickle, similar to the relishes used on hot dogs.  This is easy as anything to do.

The amount of capsicums you use can be varied, as also to onions.  If you want to keep it for  a long time leave out the garlic to avoid poisoning.  I used old pickle jars that I sterelised, but you can use canning jars also.


Green Tomato Relish

Ingredients:

2kg green tomatoes quartered
400 grams onions peeled and chopped
2 cloves garlic
2 - 4 red and greed capsicums, chopped into pieces
2 tablespoons salt
3 teaspoons mustard powder
3 teaspoons curry powder
500g sugar
3 cups cider vinegar
1 tablespoon of cornflour mixed with a little vinegar.

 

Method:


In a food processor, process the tomatoes, onions, garlic and capsicums to a small dice.
Mix the cornflour with a little vinegar, set aside
Put vegetables and other ingredients into a pan  BUT NOT THE CORNFLOUR MIXTURE.
Boil for aprox 1-1/2 hours.
Thicken with the conrflour if necessary.
Pour into warm sterilised jars and seal immediately.
Store in the fridge.
