One pan Japanese Salmon




This is a recipe from Adam Liaw called Cancan Salmon and is an everyday Japanese dinner.  You can substitute the carrot for other veg such as asparagus, but if you want them not over cooked, add them with the salmon. This recipe serves 2.

Chanchan salmon.

Ingredients:

1/4 cup white miso
2 tbsp sake (or sherry)
2 tsp sugar
25g butter
1 carrot, cut into battons
1 large brown onion sliced
1/4 cabage cut into 5cm pieces
2 cups sliced mushrooms
2 skinless salmon fillets, about 200g each

Method:

Combine miso, sake and sugar with 1/4 cup water and mix until smooth.
Heat a large frypan and add half the butter, carrots and onions.  Fry for 2 minutues or until onion is cooked.  Add cabbage and mushrooms, mix well and fry for another 2 mins.
Place the salmon fillets on top, add remaining butter and pour miso mixture over everything.  Stir to combine.
Cover pan with lid and cook for 7 minutes.  Do not open lid.
Stir to break up the salmon and combine.
Serve.
