Christmas Rocky Road.

 This is Christmas rocky road because I never make it any other time.  Its great as a small gift to friends at this time of year.


This is a large recipe, use one of those foil baking tins to make it in. Who needs more washing up at Christmas? 

What goes into the rocky road is up to you, use the nuts you like and the sweets you like.  Clinkers would work well, or jelly raspberries. Always use the bought amaretti biscuits as they are quite hard, buy a large packet at least 350g. The quantities of nut, sweets, cherries and marshmallows are flexible.  If you are 100g more or less just pick it up somewhere else.   Use mini or large marshmallows - it does not really matter., and make at least one day before you want to use it.

Top it with whatever sprinkles you may have, or coconut, or nothing at all.

Christmas Rocky Road

Easy

Ingredients

500g dark chocolate (chopped)

300g milk chocolate (chopped)

250g soft butter

8 tablespoons golden syrup

350-450g of hard amaretti biscuits.

300g glace cherries (red and greed works well)

500g marshmallows (2 large packets)

150g malteesers (or another sweet)

200g pistachio nuts (or substitute)


Method

Line a pan aprox 15cm x 20cm with baking paper.  

Put the chocolate, butter and golden syrup into a saucepan and melt slowly over low heat.

In the meantime, combine all the rest of the ingredients in a very large bowl.

Once the chocolate etc. is melted and combined, pour over the other ingredients and mix thoroughly.  it will look like there is not enough chocolate but there is!

Put into baking pan and smooth over.  Now is the time to put any sprinkles you may have on top, or some people like coconut.  I do not put anything.

Refridgerate until set.
