Gin and tonic in a cake.

Wow, I took a look on the net and there are lots of gin and tonic cake recipes.  This one is from the Home Beautiful of  May 2020 and makes 6-8 perfect cup cakes from just one egg!



The original recipe uses buttermilk and like zest to give it that tonic taste, add a lovely gin (not one that has a strong cucumber bent) and you have a lovely gin and tonic afternoon tea.

You could make this using orange and grand mariner, or lemon and lemonchello, or simply substitute the alcohol for a juice.  They only take one egg a few minutes to mix, about 20 mins to cook, half an hour to cool and 5 minutes to ice.  In an hour you could have cupcakes for a special person.

You also can easily double the recipe for more cup cakes or make one larger cake.

Ingredients
80g butter at room temp
1/2 cup caster sugar
grated zest of one lime
1 egg
1 cup self raising flour
1/2 cup buttermilk
2 tblsp gin

Icing
1-1/4 cups icing sugr mixture
1 tblsp gin
1-2 tblsp lime juice.

Method
Set oven at 180C  (160 fan forced)

Use a stand mixer, blend butter, zest and sugar until creamed.
Add in egg and mix
Sprinkle on sifted flour, add butter milk and gin and mix for 30 seconds more until smooth.
Place mixture into cup cake patty-pans (paper).
Bake for aprox 20 mins untill golden on the edges and the cakes spring back when touched.
Place on rack to cool

When cold, mix icing together and ice cakes.

One of the simplest cup-cakes out there!
