Thia Beef Salad for a crowd

This recipie is what I make when I need to feed a lot of people, its easy and quick to do and tastes great.  The secret is in the roasted rice, and the dressing. The amount of steak you use depends upon how many people you are feeding, but the salad ingredients make enough for about 6 people.

Always taste the dressing to see that it is balanced, it should taste a little salty and sour, but not too much.

 

Thai Beef Salad

Ingredients 

3tbsp rice
250g steak (fillet or rump) per 2 people.

1 red onion, finely sliced
1 bunch of mint, sliced.
1 bunch corriander, sliced
1 lettuce head, shreddeed
1 bunch spring onions chopped (optional)
1 cucumber, sliced
1 tomatoe per person, cut into medium pieces (not finely diced)

{Other optional things for the salad include thai basil, thai mint, peanuts and sliced capsicum.  You can also sprinkle mint leaves or coriander leaves on the top at the end.

Dressing:
1 clove garlic, grated or finely chopped
1 small chilli, finely chopped  (add additional if you like it hot)
2 tblsp sugar
4 tblsp lime juice
4 tblsp fish sauce
4 tblsp oil
3 drops sesame oil

Method:

Heat rice, stirring constantly in a saucepan over medium heat until golden.  Grind in a grinder or food processor.
Place all salad ingredients into a large bowl with rice.
Make dressing by stirring all ingredients together until emulsified.  Taste and add more lime if it needs it.
Cook steak over high heat until cooked to about rare/medium rare.  Rest for 5 minutes.
Slice steak thinly, and place in dresssing for about 5 minutes.
Pour steak and dressing onto salad and mix well.
Serve immediately with rice or noodles, and lime wedges on the side.
